Hi everyone, long time lurker, first time posting.
I'm planning a dinner party for some friends (9covers including myself) and I am, by this point, considered the chef of the group so I want to do something special.
One of the courses of the evening I want to do a pasta dish, so I found a recipe for a chicken mousse ravioli. However, the recipe doesn't state whether or not to cook the filling first, it just says to blend the chicken breast with the cheese, cream, and egg yolks.
When I've made ravioli or tortellini in the past I've always at least parcooked the filling, knowing that the cooking process would be finished when I cook the pasta.
So do you think I need to cook the chicken breast first, before making the mousse?
