What is an alternative to soybeans for making doenjang/miso?

What fermented pastes exist around the world that don't use soybeans (or possibly not even beans at all)?

For clarification, I am looking to experiment in using foraged ingredients to create a fermented paste similar to doenjang or miso, particularly foraged in california. I ask this question in hopes of finding inspiration on what base ingredients I can use.
