Homemade frozen home fries

So I am often lazy and buy those bags of frozen Ore-Ida breakfast potatoes, the small cubed potatoes, sometimes with onions and peppers mixed in. ("Potatoes O'Brien")

Lately I've been having trouble finding them at the store (seems they're always out) and making them from scratch is usually more effort than I want to put in on any given morning when I feel like having them.

So I wondered about trying to make a whole bag of them myself ahead of time and then freezing them, so I can just pull them out when I want them. What would be the best way to do this?

I was thinking of cutting up my potatoes, par-boiling them, then draining them, letting them cool and putting them in a freezer bag in the freezer. Then when I want them, I can just cook them as normal in a skillet on the stovetop.

Is there any reason this method wouldn't work? It seems pretty straightforward to me, but I wasn't sure whether there's anything special that needs to be done when freezing potatoes.
