Sauce/Marinade for Grilled Seafood

I've noticed that at seafood grill restaurants, they'll often brush some sort of brown, liquid sauce over fish as it gets grilled. The fish ends up with a really nice, sorta sweet but well-seasoned flavor. What kind of sauce/liquid is usually used?
