why is some seaweed salad better than others?

Nice seaweed salad at nicer restaurants is more subtle and not slimy at all. Is this just that they buy a better frozen product or do they do anything to it after thawing like washing and dressing it? I bought a frozen brick and it was not the same. Are there any secrets?
