Egg Noodles Take Too Long Cook. Help.

My homemade egg noodles take forever to cook. I cook them in beef broth. It can take 45-60min just to get them tender enough to eat. If I cook after a couple hours sitting, the middle stays raw like. If I let dry completely over night, the middle stays hard. All the recipes say up to 15 minutes and tender. But the middle just won't cook like it should.

What I am I doing wrong? Too much or not enough flour? Too many noodles for the size of pot used? Boiling too hard? I can't find anything which addresses this.

Can anyone help?
