I experimented by letting my canned soup sit for 1 year past its best before date and then compared it with a soup i had just bought (which is 2 years away from its expiration)

I could not tell much difference in terms of texture but the expired one clearly tasted more salty and looked murky. Both are same brands. How do you explain this difference
