Baking chicken breast

So I kind of suck at oven baking chicken breast.

I have tried so many times.

I season with salt, pepper, other blends of spices.

I use a meat thermometer in my chicken breast. I place in my oven at 425. From my understanding the chicken has to get to 165 degrees? So when the chicken is at like 159 I pull the chicken out. Let rest and eat.

It just never taste as good. The last 3 times also the chicken breasts I used like expanded while cooking and had so much liquid inside them, almost in like a liquid pocket
