Best preparation and/or reheating method for a lamb roast that will be served 2-3 hours after being cooked.

I’m planning to cook a lamb roast that then needs to be driven 1.5 hours away and then prepped and served. There is a crappy oven (it’s not very powerful and heats unevenly) and a microwave at the destination.

So, I want to cook the roast and roasted vegetables at home (in my trusty Bosch oven) and then reheat when I arrive. What would be the best way to reheat and/or prepare this meal?
