I’ve tried mock “teppanyaki” fried rice recipes and they never taste that good

I’ve tried multiple recipes I’ve seen on YouTube , reddit , google and even asked the chefs themselves. I’ve tried day old rice, I’ve tried lots of butter, I’ve tried teriyaki. But it never turns out tasting as good as it does in the restaurants. Last time I went to a hibachi restaurant I saw the chef use Salt,pepper, sugar, some mystery seasoning, butter, soy sauce, yum yum sauce, teriyaki sauce, and 2 mystery sauces. Does anyone know what I may be doing wrong? And if anyone has work as a chef in these type of restaurants do y’all know what those mystery sauces and seasonings might be?
