Will caramel made from isomalt and honey make honeycomb candy?

I wanted to make some honeycomb candy, but some of my family members are trying to cut down on sugar. I did some research and found that one of the only sugar substitutes that will caramelize is isomalt, however I am unsure whether the caramel made from it and honey will react to the baking soda as it would if it was done with sugar and honey.

Will it work using isomalt or am I just better off using sugar and honey?
