La Mian (啦面) / Hand-Pulled Spaghetti?

So, I just made a relatively large pot of spaghetti, but am looking for higher quality noodles than the $2 option at my local grocery store.

I want to go as minimal as possible, as I like the idea of being personal with my cooking and relying on my hands, knives, and pots only (and maybe a food processor).

So, here's my question: Can you effectively do hand-pulled spaghetti (or La Mian Noodles with Spaghetti) with the dish still turning out good? And, if not, what approach should I take for minimal equipment noodle making?
