New to Stainless Steel and all the smoke that comes with it.

Hello all,

I’m a few months into using stainless steel pans, which comes a few months after moving and using a new stove that has completely messed up my amateur cooking.

Regardless, now it feels like every time I cook something- from meats to veg all varieties- my whole apartment fills with smoke. I try to lower the heat when it gets really bad, which ends up screwing with the meal.

Any advice? I always preheat my pan and do the Leidenfrost test.
