Hi there! Due to an excess of strawberries in my CSA, I decided to make a shrub. Specifically, I am trying to make a strawberry and Szechuan peppercorn shrub.
I used a cold method of making shrubs and let the strawberries sit with equal parts sugar for 24 hours. Then I added red wine vinegar and white vinegar (the white was less than the red as I ran out of the red). I bottled them and added the Szechuan peppercorns directly to the jars.
My question is, should I strain out the peppercorns? Let them sit for a day and then strain? Or can they stay in the shrub mix without fear of mold or bacteria growing?
