Hi everyone! So I'm not a particularly experienced cook, but for the summer time (and especially for backyard barbecues), my go-to is always my grandmother's macaroni salad. It's super simple (elbow macaroni, mayo, onion, relish, salt+pepper, and a couple cans of tiny shrimp) but it's always a huge hit.
This weekend, I'm meeting my new boyfriend's family at - conveniently - a cookout! I told him I can bring my macaroni salad and he loved the idea, but fortunately I told him a bit more about it, and it turns out his mother hates seafood. The shrimp is really what makes this delicious (the only thing I've ever substituted it out for is tuna if someone has a shellfish allergy) so I'm a bit stuck on an easy way to solve this.
I'm thinking I'll still make it mostly as normal, and just split it in half at the end - one half with the shrimp and the other half with.... any thoughts that don't include seafood? Maybe vegetables, hardboiled egg, diced ham?
