So I got some lobster bodies from a local restaurant because I need to replenish my stock supply, but I'm not used to acquiring entire bodies, instead of just shells.
I hate to throw away the meat (and tomalley - which I love, though I realize it's a polarizing delicacy), and I know that using the whole bodies can make a stock bitter.
Any ideas at all for what I can do with these would be much appreciated, including what to discard/how to clean/etc, because I'm totally new at this whole body business.
(Bodies being: whole lobster, minus the tail and claws, little legs still present and accounted for.)
