Hotel pans toxic to cook in over gas burners?

Hey all,

I was recently told by someone in my kitchen that putting a full hotel pan across 2 gas burners and heating/cooking in it causes the metal of the hotel pan to release toxins into the food and it was an "unsafe practice".

Now, this isn't something that I do often, usually only when deglazing a pan from roasts or something, but I'm curious if this is factual or if it's just one of those weird rumors that somehow circulates and no one knows why. It would seem to me that if this were the case, hotel pans shouldn't be used in ovens either, but that isnt the case...

In my 12 years of kitchen work, I've never heard of this before, and I've seen it done countless times, but I'm just curious if anyone has insight into the validity of this statement, or any info on where this idea (if untrue) may have come from. I dont want to be the guy to "well, actually..." anyone, but it also seems just so absurd to me...
