Hello!
I have recently had a little of time off between jobs and I have been each day trying to create a candy, ice cream, or composed dessert. I have been learning so much about a side of the kitchen that I never really ventured in! As a long time cook, I have a lot of peripheral experience with pastry and even some hands on, but nowhere near I'd like to be.
I'm sitting here with my ideas to create for tomorrow and I was just wondering if anyone wanted to bounce some ideas off!
Yogo's : The nostalgic snack we all remember. I think it would be pretty cool to be able to recreate these the same size and texture. Any ideas on a possible MOP?
Fruit twistables: Another nostalgic moment for me. It's basically two fruit leathers that are in noodle shapes & intertwined. Basically two fruit noodles. I have no real direction for this besides a fruit gel? I'm not sure where to go where there could be two actual plyable fruit "noodles" that can be intertwined but not get gummy or melt out. any ideas?
Sour patch berries: I interned at a Restaurant a while back and neglected to get this recipe for this technique i'd love to take forward. Basically they were super ripe husk cherries rolled in a syrup of glucose and I really want to say eggwhite & dehydrated. Halfway through the dehydration they are rolled in sugar & rose powder to dust the very thin, sugar shell. Again, such a vague memory and I'd love if anyone would help with the idea or MOP?
Anything helps, even other ideas! Thanks yall.
