Actually, what I have is not the well-known spinach but Indian Malabar spinach (it grows here and is much more accessible). According to the internet, Malabar spinach is just like regular spinach when cooked and may be even less bitter.
However, I have found that that is not the case. My spinach always comes out bitter, even when I boil it in salt.
