Question about cooking on a spit

I was just curious about how Halal carts and similar food carts/trucks can safely make food on a spit. It was my understanding that the danger zone for meat was between 40-140 degrees Fahrenheit and that spits only cook the outer layer of meat until you eventually get to the center. Doesn’t that mean the interior meat is just sitting in that danger zone for the majority of the time?
