I recently ordered the butterflied axis deer leg linked below. I'm hosting some family and want to grill it into something good. Hoping to have some sort of steak or medallion cut as the final product. They have some recipes on their website but there is not a lot of description as to what cuts of meat are included in the leg. I'm wondering if I'll be able to break this leg down further into different cuts or if I should cook it whole as they suggest. On their website it seems they "shave" the final product down after cooking. Would also appreciate any advice or tips! Thank you
