Books on Vegan/Plant based cooking fundamentals

I want to reduce the meat/animal products in my diet. I also like cookbooks that focus on fundamentals rather than recipe memorization. Unfortunately most of the "fundamentals" cookbooks I've seen recommended on this sub use eggs, butter and meat pretty heavily. Can anyone recommend a good plant-based fundamentals book?
