French onion soup misery

I'm a competent home chef cook making a 4x batch of French onion soup, following the recipe from 'joy of cooking'.

Is there any hack or shortcut for the labor of watching and stirring? Can I at least use a lid to steam them somewhat?

I wish I had a steam jacket bowl for my mixer like a professional, but sadly I don't. And my stand mixer isn't that big anyway.

Currently looking at a large pot of raw onions.
