How do you thicken the sauce using SV meat juices?

I do a lot of sousviding and always throw away ziploc bags full of meat juices after each cook. What ingredients do you add to it to make the juices into a thick consistency sauce like. These ingredients must have no carbohydrates, sugar, or anything. I follow a very strict keto and carnivore diet. Thank you.
