Massaging citrus zest into sugar before baking - is there a difference?

I've noticed that a popular food content creator I follow always instructs to massage citrus zest with your hands into sugar for 3-5 minutes before using for baking. She mentions that this releases essential oils into the sugar yielding a more flavour-packed result for your baked goods. Says not to skip this step.

I normally just add zest into my batter anyways (making sure it distributes evenly) and I do get good, flavourful results I'd say. So I was just wondering whether this extra step is something worth incorporating into my recipes - is there a notable difference? She seems very persistent about it so it's just gotten me curious as an amateur baker.
