So basically, my girlfriend has developed a few health issues. She developed hemorrhoids, and the doctor says that she should eat as little meat as possible, if not eliminate it completely. Within weeks of this diagnosis, she's also developed what look like allergies (rashes on the skin), but might not be allergies because the allergologist who took a look at her bloodwork didn't seem to think they were allergies, and antihistamines don't seem to work on them. However, we have identified a few triggers:
- sugar (including most sweeteners like coconut sugar, honey and maple syrup, but not including stevia, sucralose, erythritol, and certain oligosaccharides)
- starches like rice (regardless of color), pasta, potatoes, etc.
- wheat, oats, flour (not including almond and coconut flour)
- fruits that are high in sugar
- night shade vegetables
- coffee
- garlic
- canola oil
- cow's milk (but not things made of milk like cheese and yogurt)
- eggs when not cooked properly
Anyway, the weird need to combine vegetarian and keto has led us to experimenting with tempeh. But as of now, all we've really done is season it and fry it in butter. I've read that tempeh is best using marinades. However, most recipes I find online contain ingredients that are on the list above. I can try a few replacements like replacing soy sauce (which contains sugar) with coconut aminos or sugar with stevia, but the stuff I find online is still really hard to pull off even with replacements.
My current thoughts are trying to make a version of Filipino barbeque marinade using coconut aminos instead of soy sauce, stevia instead of sugar, and a stevia-sweetened soda instead of Sprite. However, I'd have to completely cut out garlic and ketchup (the recipe I'm basing this off of is here), so I'm not fully confident in this.
I also want to have other marinade options, so I've come to this subreddit for help. If you guys have any other tips for cooking tempeh, I would also greatly appreciate it.
