Made nachos with cheese sauce from scratch. Felt like it had no flavor.

I made a Monterrey Jack cheese sauce, just half onion, butter, flour, milk into roux and add jalapeño and Monterey Jack cheese.

I felt like the sauce had no flavor at all. What is lacking from the cheese?
