Bought myself a meat grinder and I've been trying out some common dishes using my own grinds - burgers, meatloaf, meatballs. I find that my own ground beef simply doesn't have as much of a unctuous beefy kick to it as the store bought stuff. It's downright bland sometimes. The texture is also kinda unappetizing; it's really crumbly and mealy in my mouth and doesn't hold firm at all.
I think I avoided most of the common mistakes with this stuff. I didn't change my cooking methods at all and always used a lot of salt. I made sure my grind had enough fat, using mostly chuck/sirloin (plus I'm already accustomed to cooking with 90% lean beef).
What could I doing wrong? Could a better cut of meat like brisket or short rib fix this? Or is this actually the true taste of homemade ground beef and I just need to get used to it?
