Puréed Onion and Celery For Pot Roast

I’m making a pot roast but I hate the way chunks of onion and celery turn out when I make it on low in the crock pot or Dutch oven. I was thinking I’d try pureeing the onion and celery with some garlic and red wine and add it to the pot in the beginning instead of large pieces. I couldn’t find much on Google about this technique. Has anyone tried this?
