What is askculinary's opinion on induction vs gas stoves?

I know a lot of amateur cooks that prefer induction stoves because they are easier to clean up, but for those that can really appreciate the nuances of a stovetop, which one provides a better cooking experience and the ability to cook better food?

Is there a reason we don't really see them in commercial kitchens?
