what's a good ressource to learn stew making?

Hi all,

As the title suggests, I'd like to up my game in term of stew making. With winter coming and all...

Most of the recipes I see are calling for veggies and meat in a pan, coat with flour, put alcohol, stock, and cream.

But I got a toddler and the wife is pregnant, so alcohol is a no-no. Also, I live in Japan, and the quality of the cream is purely awful. (I'm french and am used to proper crème fraîche !)

So yes, as previously mentioned, where could I find either fine recipes, or just a way to learn about stew techniques so I could make whatever I like best ?
