Why do my oven-baked turkey meatballs excrete something that can only be described as “turkey gel”?

Whenever I follow this recipe for baked turkey meatballs, they come out of the oven sitting in a puddle of “gel” that came out of each meatball while baking. I’m pretty sure it’s just fat, but the problem persists and seems the same regardless of the ratio of meat to fat used. And I’m pretty sure this happens when I make oven baked chicken meatballs for other recipes too.

Is there any way to prevent it? Any ideas on what’s causing it? Asking because it’s pretty unappetizing, annoying to peel off before serving, and I don’t see this problem in pictures of anyone else’s baked meatballs, so hopefully somebody else has this figured out.
