Chopping Butter Faster

Hi there

I am a kitchenhand who has gone from fast food + pub/deepfrying resturants to a fine dining 5 star establishment. I am having trouble with speed when it comea to chopping butter and am wondering if anyone has tips on how to do it. Currently its taking me 1 hour to chop 7 1.5kg blocks.
