Hanukkah meal—timing foods so they stay warm

Hi. So we’re doing chicken schnitzel, latkes, roasted veggies, mac and cheese, and deep fried apple turnovers for dessert for between 15-20 people.

I’m curious how you guys would time these out? We only have one oven. We will prep our veggies and the potatoes ahead of time, and fill our apple turnovers and keep them in the fridge until we’re ready to fry…but knowing we have to shallow fry latkes and schnitzel and cook the roasted veggies I’m not sure how to keep everything warm so we can all eat together.

I think I could find a crockpot Mac and cheese recipe but in the past baked is always better. I’m a little at a loss.
