Hi all,
My immediate family of 18 (!) people will all be home for Christmas this year. There are 3 vegetarian/pescatarians in the group. I am trying to come up with meal options that can be made in a large format and easily have a smaller portion made veggie. For example, I will be making a pasta and chicken casserole that I can compile completely vegetarian and just add in chicken to the big casserole and no chicken in the smaller casserole for 3 people. Anything that can be made almost completely and then just the meat portion left out so I don't have to cook 2 meals for every meal!
I am looking for any and all recipes that are adaptable for large groups but also good to spin into a veggie option. Anyone have any go tos, suggestions, ideas? HELP!!!!
