Should sausage patty recipe include breadcrumbs and/or eggs (or substitutes)?

I’m planning on making some homemade turkey and apple sausage patties as an easy alternative Christmas dinner but the recipe I’m using is just ground turkey, oil, apple, garlic, fresh herbs, and seasoning.

I’m more used to making meatballs or meatloaf and usually include egg and/or breadcrumbs so I’m wondering if these will hold together without filler/binder (or maybe I’ve always misunderstood the purpose of these ingredients).

Because of various chaotic factors in life recently I’ve not been able to do a test run and if they’re not amazing that’s ok but I’d like to be able make something decent to serve my family on the 25th.

Not looking for other meal ideas, just wondering if this recipe is missing something important or if it’s likely to work ok. I doubt it matters but I’m planning on mixing and shaping them ahead of time and then freezing the patties and frying from frozen.
