How to add more beets into my dishes

My wife loves beets in all forms. I think they're meh at best and while I'm not at all picky, I have no desire to have them in any of my dishes. Ever.

How can I incorporate beets into my dishes subtlety? Something that the beet can shine but not take away from other, more dominant flavors.

If it helps, I try to cook as many different cuisines as possible from as many different cultural backgrounds and flavor profiles as possible. My only limits are set by what's available at the grocery store.
