I've always loved a good tomato vodka sauce and I've finally made some a few times recently with great results. I can only seem to find Vodka sauce recipes/ideas that include tomato. I'm curious about the role of vodka in a sauce that doesn't have tomato. Is it applicable in a simple olive oil sauce? Is it useful in a cheese sauce? Are there key components that really make proper use of using vodka instead of wine?
