I'm currently experimenting with vindaloo, and of course most recipes call for palm vinegar. This is not easy for me to obtain, and I've done some research for the best replacement.
I've seen white wine vinegar with lime, apple cider vinegar with sugar, etc.
From your experience, what is the closest substitute that emulates palm vinegar?
