Cooking with alcohol?

Hello everyone, long time lurker first time poster here. I’m making a cheese sauce that I added a bit of whiskey and a beer to. That got me thinking about how long it takes to simmer out the alcohol contents of said liquor and beer. I’m also wondering if you were simmering over medium heat, would that make the alcohol evaporate faster than if you were simmering on low? It’s been cooking for about 1.5 hours now and I still get a blast of alcohol up the nose every time I stir. Any input is appreciated, thank you all in advance!
