Why did my strawberry crumb bars come out so tart?

While I was making the filling I did a taste test and it was very sweet and fine but after I finished baking everything the bars were very tart.

They are still fine to eat the flavor just wasn't what I was going for.

Filling: 6 cups strawberrys, 1 cup white sugar, 2 TBSP corn starch, 2 TBSP Lime juice, 1 TBSP butter.

Cooked together in a pot on medium heat for 15 minutes.
