Why is my butter milk not sour?

I made butter with my stand mixer using 36 percent whipping cream after watching Chef Jean-Pierre's YouTube video. My buttermilk which I was excited about isn't even a little tangy. Does anyone know why? Should I have left it churning in the stand mixer for longer?
