Samples available make it hard to compare. I’m looking for a Bocuse to slot between Escoffier and Robuchon, both of which are short sharp formula style recipes but pretty damn comprehensive, and have no photos. Of the above which would fit into this set better? Only difference I can glean from free samples is the former has photos of the finished dishes while the latter has step by step photos. But are the selections of recipes similar?
