Help with an Apple Bread recipe

This is a recipe I have used for making an Apple bread which I like to use for French Toast. It is pretty good but I have a couple issues and I am too much of an amateur to figure it out on my own.

First, it's pretty rich, I wonder if using less butter would work? Second, it doesn't rise very high - I would like it to have a little more volume and be a little less dense. Note: I fold the apple mixture in after I make the dough

▢1-1/2 cups all-purpose flour
▢1-1/2 teaspoons baking powder
▢1/2 teaspoon salt
▢1/2 cup unsalted butter, softened (1 stick)
▢1/2 cup granulated sugar
▢2 teaspoons vanilla extract
▢2 large eggs
▢1/2 cup milk
Apple Mixture:
▢1/2 cup light brown sugar packed
▢1-1/2 teaspoons ground cinnamon
▢1 large apple peeled, cored, and chopped into small pieces
Topping:
▢2 tablespoons brown sugar
▢1/4 teaspoon ground cinnamon

DIRECTIONS
Preheat oven to 350°. In a large bowl, stir together chopped apples, lemon juice, brown sugar, and cinnamon.
In another large bowl using a hand mixer, cream together butter and sugar until light and fluffy. Add eggs and vanilla and beat until smooth.
Add flour, baking powder, mix until just combined.
Baking time is about 60min
