Odd Burger Toppings

I figured I'd ask this here.

I've added a bit of chopped garlic to the top of my burger before, went out to the garden and tossed on komatsuna, spinach or young chard.

Usually, it's because I prefer them over lettuce, honestly.

Could I also try adding orach, watercress, maybe even celery to some extent - chervil if I wanted or other things, mitsuba, shiso?

Or, are some of these better off mixed into sauces or things?

It would be nice to serve dishes like these, just to friends or anyone.

I've also thought about using fruity tasting tomatoes / orange / white tomatoes that taste better in my opinion than red ones, on burgers.

Had fish one day, remembered I had Alliaria petiolata / Garlic Cress outside, got a bunch of leaves and chopped them finely - added them to fish.

Added a bit of a garlicky taste that wasn't present before. I like garlic with fish.

Does anyone know if others do this, if they do this themselves or of any good combos for toppings?

I've seen people go "I don't care if a burger is healthy", but it's actually possible to make a burger that's better tasting than usual and healthier too.

Since this is a culinary reddit, I'm hoping someone has a good way to get people to want to eat this sorta stuff or something more "tame" that I could start out with.
