I made pizza today and even before i set it to proof/rise the first time, the dough was lumpy and wouldn’t pass the window pane test or form into a smooth ball. As such, every subsequent step didn’t work out as planned either and the crust was not fluffy and it was overly crispy/dry. I’m not sure what I did wrong. I’ve made pizza dough before and not had this issue. I was making a bigger batch than usual? Maybe it was just too much dough to knead? I felt like any effort to knead more was not improving the dough. What was I doing wrong?
