Store bought kimchi rather sweet

I prefer a strong, crunchy and sour kimchi, the one I bought seems to be quite mild - softer and sweet. Is it young? Any tips? I’ve seen advice on leaving it out at room temp for a night or so but I’m wondering if it’ll just age and sour in the fridge too.
