trouble with chicken - overshooting temp target

I'm not a terribly sophisticated cook, but trying to get better at basics.

I've had this problem a couple of times now and don't know what to do about it.

I'm aiming to cook my chicken breasts to 155°F.

I'm pan frying, and a couple minutes after flipping them, I insert the thermometer (a Thermopop instant read) into the thickest part. Temp reads around 130.

Wait a couple minutes, temp again, no change.

Wait a couple minutes, no change.

Wait a bit longer, like a minute or two, and suddenly it's at 170+.

Anyone got any suggestions?
