I'm planning on putting crab bisque on a menu this summer but none of my normal suppliers carry them. The only place I can find them is on alibaba sold by the ton. Buying whole crab and picking it isn't feasible, we don't go through enough shrimp to use those shells, and I dont want to use a base. Does anyone know of a seafood company with service in the pacific northwest that carries something like that, even powdered?
