Cooking 20# of rice

TLDR: Is it possible to cook 20# of rice in a regular pot?

I had to cook for a charity thing. Lots of rice. I planned to cook 20# of rice in hotel pans in the oven. No hotel pans. (It was a community kitchen). I had to cook it in a heavy stock pot covered with a sheet pan. Failure: rice on the bottom was mushy and on top undercooked. Next time, I'll bring hotel pans, but I've seen big batches of rice cooked in stock pots before, and I'm wondering what the trick is (if indeed there is one).
